Mina Maria began as a humble market stall at the Sydney Vegan Market in December 2017 — quickly becoming one of the event’s most popular attractions. Founded by couple Emma Langley and Adam Papas, the brand was born from a shared vision: to create plant-based versions of the Greek dishes Adam had cherished since childhood.

During Sydney’s lockdowns, Mina Maria (then I Should Be Souvlaki ) expanded beyond the markets, launching a nationwide “At Home” range that brought their signature chilled products to customers across NSW, VIC, ACT, and QLD.

In 2021, the pair opened their flagship restaurant on Newtown’s famous vegan mile, earning a devoted following for their baked cheesecake60-hour marinated proteins, and buttermilk Southern Fried Chick’n — dishes that redefined what plant-based dining could be.

By 2024, I Should Be Souvlaki evolved into Mina Maria, a name chosen to honour two influential women in the founders’ lives: Adam’s grandmother Asimina (“Mina”) and Emma’s late great-aunt Maria. The rebrand reflected both a deep respect for heritage and a renewed creative direction for the brand’s future. During their time in Newtown, Mina Maria developed a passionate following and were featured on many 'best of' lists in national publications.

In 2025, following the bittersweet closure of Mina Maria, Emma and Adam transformed challenge into opportunity with the launch of Evergreen Table, a platform designed to give Mina Maria and other beloved vegan brands a chance to thrive and grow once more.

Hello Friend Foods was born in Melbourne from a simple frustration: co-founder Bree Gaudette, having embraced a plant-based lifestyle, couldn’t find a vegan cheese that was truly satisfying. Determined to solve this, she began developing her own recipes and later teamed up with Matthew Ronalds to create Hello Friend Foods.

Founded in 2018, Hello Friend Foods focused on crafting fresh, premium plant-based cheeses - including Australia’s first vegan halloumi and hand-made vegan mozzarella. Their products were free from lactose, palm oil, nuts and gluten, making them accessible to a wide range of dietary needs.

Production began in a café’s kitchen where the founders worked evenings to hand craft orders. By 2019, they had moved into a commercial kitchen, scaling up production to meet growing demand. Their mission went beyond making vegan cheese: they were committed to being 100% animal-free and flavourful - showing that choosing to eat plant-based doesn’t have to mean compromising on ethics or taste.

In 2020 the brand raised significant seed funding to accelerate growth and expand nationally and internationally. Ultimately, Hello Friend Foods ceased operations in 2023 but are thrilled their legacy can live on through Evergreen Table.

Rather than receiving a commission on Hello Friend-branded products, Bree and Matthew have chosen to donate 100% of these funds to charity, keeping the brand’s legacy aligned with its values.

Treat Dreams is an Australian vegan chocolate brand handcrafted in Sydney, born from a passion for making indulgence kind—both to the planet and to those who live on it. The brand is committed to using premium and entirely animal-free ingredients, and a taste-first philosophy: if non-vegans can’t tell the difference, it goes on the menu.

Treat Dreams quickly became known for its creamy, rich, dairy-free chocolates and inventive flavours, redefining what plant-based confectionery can be while keeping sustainability and ethical sourcing front of mind.

After the brand’s original operations wound down, the name and recipes for Treat Dreams were purchased by the founders of Evergreen Table, allowing the legacy of the brand to continue under a renewed vision.

Rather than receiving a commission on Treat Dreams–branded products, the current owners of the brand have chosen to donate these funds to a vegan charity.

Any commission on Treat Dreams branded-products will be donated with love to Animal Liberation Victoria to help them to continue their vital work.

Buddha Bowl Cafe

Buddha Bowl Café started in a small space in Newtown, quickly becoming the go-to spot for its whole-food, nutrient-rich dishes that honour the body, animals, and the environment, before it moved to a corner spot on busy Enmore road to accommodate a a growing community of plant-based diners.

The menu featured colourful bowls made with seasonal vegetables, grains, legumes, and house-made dressings, alongside smoothies, fresh juices, and fair-trade coffee.

The café was founded and run by Adam Chalk, who brought his passion for plant-based cuisine and community-focused hospitality to the heart of Newtown. Adam’s vision was to create a welcoming, bright space where people could enjoy wholesome, delicious meals while connecting with the local community — including dog-friendly patrons. Adam has also always been a leader in the plant based business community, helping to mentor up and coming business owners and support his fellow plant based business owners through the strength of community.

After nearly eight years of serving the Newtown community, Buddha Bowl Cafe announced its closure on 12 October 2025, marking the end of a beloved local plant-based destination.

Founded in 2018 by Matt and Amanda Goss, HerbiDoor was an Australian plant-based ready-meal delivery company offering delicious, nutrient-dense vegan meals straight to customers’ doors. The brand was born from their personal transition to veganism and their mission to make familiar comfort foods—like lasagne, stroganoff, and carbonara—available without compromising on taste or ethics.

Operating from the Gold Coast, HerbiDoor grew from local deliveries to servicing major Australian states with fully vegan, chef-crafted meals. It’s meals were hand-made, ethically sourced, and designed to make plant-based eating easier, more accessible, and packed with flavour. The menu included high-protein options alongside re-imagined comfort-food classics, appealing to both dedicated vegans and those curious about plant-based eating.

Matt and Amanda are thrilled to share their food with customers once again through Evergreen Table, continuing the joy and quality of HerbiDoor’s plant-based offerings.

Sable

Sable

Founded in Melbourne, Sable began as a single plant-based café in Cremorne, quickly gaining a loyal following thanks to its stacked vegan bagels, chunky cookies, and brunch-style fare. Building on that success, the founders—Jonathan, Matt, and Alex—opened a second location in Thornbury, offering a café-by-day, restaurant-by-night experience, with brunch and sweets during the day and Italian-American inspired mains in the evening.

Following their closure in 2022, in 2025 the founders welcomed the opportunity to join forces with Evergreen Table and breathe new life into the brand. As one of the founders reflected: “We would love to see our cookies and other products come back to life and be enjoyed by people again.”

Through joining the legacy brands at Evergreen Table, Sable’s legacy lives on—its spirit of indulgent, cruelty-free treats continuing to delight original fans and attract new ones.

Fresh + Frosted started as a market based business, at the monthly Sydney Vegan Market, specialising in indulgent, plant-based sweets. Known for its rich and decadent treats—cupcakes, muffins, tarts, macarons, and truffles—the brand created desserts where indulgence is measured in chocolate, not calories.

Founded by Nicole Wright, Fresh + Frosted started from a production kitchen and market stall roots, quickly gaining a loyal following among Sydney’s dessert lovers and proving that vegan treats could be every bit as decadent and satisfying as traditional versions.

After the business closed in September 2024, Fresh + Frosted joined  Evergreen Table, bringing their iconic desserts back to life so fans original and new could enjoy them once again.

Founded by Nerida and Alessandro, Vegan Arancini began as a bold vegan take on a Sicilian street‑food classic at the Sydney Vegan Market. The stall quickly became a favourite for its golden, crispy arancini balls filled with rich, plant-based flavours, delivering that satisfying crunch and gooey centre you’d expect from the original — but entirely vegan.

Driven by a passion for flavour and community, Nerida and Allesandro made Vegan Arancini a standout at the market, capturing the essence of creative, ethical street food.

After the closure of their market stall, they joined forces with Evergreen Table, bringing the spirit and recipes of Vegan Arancini to a wider audience so fans old and new can enjoy their indulgent, cruelty-free treats once again.
